Chocolate Covered Strawberry Brownies

Description

Ingredients

3 ? cups chocolate chips, divided

½ cup unsalted butter, cut into pieces

3 tablespoons unsweetened cocoa powder, sifted

1 cup granulated sugar

¼ cup brown sugar

3 large eggs, room temperature

2 teaspoons pure vanilla extract

1 cup all-purpose flour, sifted

½ teaspoon salt

2 cups fresh strawberries, halved

½ cup heavy cream, room temperature


Instructions

Step 1: Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.

Step 2: Melt 1 ? cups of the chocolate chips together with the butter in a microwave-safe bowl in 30-second intervals, stirring each time, until smooth. Whisk in sifted cocoa powder until combined. Let cool slightly.

Step 3: In a separate bowl, whisk together granulated sugar, brown sugar, eggs, vanilla, and salt for 30 seconds until slightly thickened.

Step 4: Slowly whisk the warm chocolate mixture into the sugar-egg mixture.

Step 5: Gently fold in sifted flour using a spatula or wooden spoon just until combined (do not overmix).

Step 6: Pour batter into prepared pan and smooth the top with an offset spatula.

Step 7: Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter). Cool completely by placing in the fridge for 30 minutes.

Step 8: Make the Ganache: Arrange strawberries, cut-side down, evenly over the cooled brownies.

Step 9: In a small saucepan over low heat, warm the heavy cream for about 2 minutes (do not boil).

Step 10: Remove from heat and immediately add the remaining 2 cups of chocolate chips, stirring constantly until melted and smooth. If needed, return to low heat for 10-15 seconds to fully melt.

Step 11: Let ganache cool for 2-3 minutes, then pour evenly over the strawberries. Chill in the fridge for 15-30 minutes until set.
