Description

This delicious mixture has nuts for crunch, chocolate chips for sweetness, and dried fruit for a chewy contrast—making it the perfect high-protein, nutrient-packed trail mix!


Ingredients

16 oz shelled edamame, thawed & patted dry

15 oz canned chickpeas, rinsed, drained & patted dry

1 cup raw almonds (or other nut)

1 tbsp melted coconut oil

2 tbsp honey

½ tsp cinnamon

¼ tsp sea salt

½ tsp vanilla extract

½ tsp cocoa powder

½ cup dark chocolate chips

½ cup raisins

¼ cup coconut flakes


Instructions

Step 1: Preheat the oven to 375°F.

Step 2: Dry the chickpeas & edamame thoroughly—this helps them crisp up.

Step 3: In a large bowl, mix chickpeas, edamame, nuts, coconut oil, honey, cinnamon, salt, and cocoa powder. Toss until everything is coated evenly.

Step 4: Spread mixture onto a lined baking sheet in a single layer (don’t overcrowd).

Step 5: Roast for 25-30 minutes, stirring halfway through.

Step 6: Turn off the oven & let sit for 5-10 minutes.

Step 7: Cool completely, then mix in chocolate chips, raisins, and coconut flakes.

Step 8: Store in an airtight container for up to 1 week at room temperature.
