Ingredients
1 cup dry whole wheat macaroni
1 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
½ tsp smoked paprika
4 oz turkey bacon, chopped
1 cup grated carrot
? cup flour
5 eggs, beaten
¾ cup grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
Instructions
Step 1: Preheat the oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
Step 2: Cook pasta according to package directions, then drain and set aside.
Step 3: In a skillet, heat olive oil over medium heat. Add onion, garlic, smoked paprika, and cook for 2-3 minutes. Stir in turkey bacon and cook until crispy, about 3 more minutes. Mix in grated carrot and cook for 2 more minutes.
Step 4: In a large bowl, whisk eggs, Parmesan, flour, salt, and pepper. Add in cooked pasta and sautéed mixture, stirring until well combined.
Step 5: Pour the mixture into the prepared pan. Bake for 35-40 minutes until golden brown and firm. For extra stability, let cool completely before slicing.
