Ingredients

Scale

1 cup coconut sugar

¾ tsp cayenne pepper

¾ tsp ground cumin

1 tbsp ground cinnamon

1 tsp ground ginger

1 tsp salt

2 egg whites

6 cups raw, unsalted nuts

Instructions

Step 1: Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.

Step 2: In a medium bowl, combine the sugar, cayenne pepper, cumin, cinnamon, ginger, and salt.

Step 3: In a large bowl, whisk the egg whites and 1 tbsp. of water together until very frothy.

Step 4: Add the nuts to the egg wash and toss to coat. Now add the spice blend and toss until the nuts are completely covered.

Step 5: Spread the nuts in a single layer on the baking sheet and bake for 10 minutes, then stir and bake for a further 10 minutes until the nuts are toasted and crisp.

Step 6: Remove the sheet from the oven and set aside to cool as the nuts will get crisper as they cool down.

Step 7: Place into an airtight container and store for up to 1 week.
