Roasted Edamame Chickpea Trail Mix

Ingredients
16 oz shelled edamame, thawed & patted dry
15 oz canned chickpeas, rinsed, drained & patted dry
1 cup raw almonds (or other nut)
1 tbsp melted coconut oil
2 tbsp honey
ยฝ tsp cinnamon
ยผ tsp sea salt
ยฝ tsp vanilla extract
ยฝ tsp cocoa powder
ยฝ cup dark chocolate chips
ยฝ cup raisins
ยผ cup coconut flakes
Instructions
Step 1: Preheat the oven to 375ยฐF.
Step 2: Dry the chickpeas & edamame thoroughlyโthis helps them crisp up.
Step 3: In a large bowl, mix chickpeas, edamame, nuts, coconut oil, honey, cinnamon, salt, and cocoa powder. Toss until everything is coated evenly.
Step 4: Spread mixture onto a lined baking sheet in a single layer (don’t overcrowd).
Step 5: Roast for 25-30 minutes, stirring halfway through.
Step 6: Turn off the oven & let sit for 5-10 minutes.
Step 7: Cool completely, then mix in chocolate chips, raisins, and coconut flakes.
Step 8: Store in an airtight container for up to 1 week at room temperature.
