A delightful cocktail that combines the rich flavors of raspberries and espresso for a unique martini experience.
Ingredients
1 cup cane sugar
1 ½ cups raspberries
¾ cup water
¼ cup cocoa powder, sifted
1 tsp vanilla extract
Pinch of sea salt
1 shot espresso
2 oz vodka
½ oz coffee liqueur
Instructions
Step 1: In a small saucepan, combine sugar, raspberries (fresh or frozen is fine), and water. Bring to a boil, stirring to dissolve sugar. Reduce heat to simmer and mash raspberries with a spoon or potato masher.
Step 2: Simmer for 8-10 minutes until slightly thickened. Strain directly into a jar or measuring cup to remove seeds.
Step 3: While still warm, whisk in cocoa powder, vanilla, and sea salt until smooth.
Step 4: Fill a cocktail shaker with ice. Add espresso, vodka, coffee liqueur, and the desired amount of raspberry chocolate syrup to make the martini.
Step 5: Shake vigorously for 15 seconds to chill and create foam. Strain into a coupe or martini glass.
Step 6: Garnish with coffee beans and raspberries. Enjoy!
