Fiery Pineapple Shrimp Skewers

Description

A delicious and healthy dish featuring grilled shrimp, fresh vegetables, and a tangy pineapple turmeric salsa. It’s gluten-free, paleo, Whole30, and keto-friendly.


Ingredients

3 tablespoons extra olive oil

2 tablespoon fresh lime juice, divided

4 cloves garlic, finely minced and divided

1 teaspoon chili powder

2 teaspoon turmeric powder, divided

1/2 teaspoon ground cumin

1/2 teaspoon salt, plus more to taste

1 lb fresh shrimp, peeled and deveined

2 1/4 cups red onions, divided

12 small zucchini, sliced into 1/4 ” circles

1 1/4 red bell pepper, divided

3 1/2 cups fresh pineapple chunks, divided

1/4 teaspoon ground black pepper, plus more

1/2 teaspoon red pepper flakes, divided

1/4 cup cilantro, for garnish


Instructions

Step 1: In a small bowl, whisk together olive oil, 1 tablespoon lime juice, 2 minced garlic cloves, chili powder, 1 teaspoon turmeric powder, cumin, and ½ teaspoon salt.

Step 2: In a large bowl or resealable bag, combine shrimp, 2 cups red onion cut into 1″ cubes, 1-2 small zucchini slices, 1 red bell pepper sliced into cubes, and 2 cups pineapple chunks. Pour the marinade over the mixture and gently toss to coat. Refrigerate for 15 minutes.

Step 3: In a medium bowl, combine 1 ½ cups diced pineapple, ¼ cup diced red onion, ¼ cup diced red bell pepper, chopped cilantro, 2 minced garlic cloves, 1 teaspoon turmeric powder, and a pinch of red pepper flakes (optional). Add the juice of 1 lime and season with salt and black pepper to taste. Toss well and set aside.

Step 4: Thread the marinated shrimp, veggies, and pineapple onto skewers, alternating the ingredients. This recipe makes about 10–12 skewers.

Step 5: Preheat the grill over medium heat. Place the skewers on the grill and cook for 3–5 minutes per side, or until the shrimp are pink and cooked through.

Step 6: Serve the skewers with the Pineapple Turmeric Salsa on the side. Garnish with fresh cilantro and lime wedges, and sprinkle with additional salt, pepper, or red pepper flakes if desired.
