Description
A delightful and colorful appetizer featuring cheese tortellini, mozzarella balls, cherry tomatoes, olives, marinated artichokes, roasted red peppers, salami, mortadella, dressed in Italian dressing and balsamic reduction.
Ingredients
12 cocktail-sized mozzarella balls
24 refrigerated cheese tortellini
12 cherry tomatoes
12 pitted olives
12 marinated artichokes
12 slices roasted red pepper (about 1″ each)
6 slices salami, folded
6 slices mortadella, folded
7 tbsp Italian dressing (divided)
½ cup balsamic vinegar
Chopped fresh parsley or basil (optional, for garnish)
Instructions
Step 1: Boil tortellini according to package instructions, drain, and rinse under cold water.
Step 2: Add the cooked tortellini and the mozzarella balls to a medium bowl and toss well with 5 tbsp of Italian dressing. Marinate all together for at least 30 minutes or up to 2 hours for more flavor.
Step 3: In a small saucepan over medium heat, simmer ½ cup balsamic vinegar for 8-10 minutes, stirring occasionally, until it thickens and reduces by about half to create balsamic reduction.
Step 4: Thread ingredients onto 6-inch wooden skewers alternating colors and ingredients.
Step 5: Just before serving, drizzle with remaining 2 tbsp of Italian dressing and balsamic reduction. Garnish with fresh parsley or basil if desired.
Step 6: Cover and refrigerate for up to 12 hours for the best freshness.
