Pasta with Veggie Packed Tomato Sauce

Description

A delicious, but healthy pasta with a veggie packed tomato sauce!


Ingredients

6 oz. whole wheat pasta

1/2 tablespoon olive oil

1 medium zucchini, grated

3/4 cup carrots, grated

1/4 bell pepper, diced

1 cup chopped spinach, loosely packed

1/4 small yellow onion, diced 

2-3 cloves garlic, minced 

1 (14-ounce) can crushed tomatoes

1 tbsp tomato paste

1/2 cup vegetable broth

1/2 teaspoon sea salt, or to taste

1 tablespoon Italian herb blend

1 bay leaf

Fresh basil for garnish


Instructions

Step 1: Cook pasta in boiling water until al dente according to package directions. Drain and set aside.

Step 2: Heat olive oil over medium-high heat. Add onion and garlic, sautéing until fragrant (about 2 minutes). Add the grated zucchini, carrots, and bell pepper, cooking for 4-5 minutes until softened. Stir in the spinach and cook for another minute.

Step 3: Add crushed tomatoes, tomato paste, vegetable broth, salt, Italian seasoning, and bay leaf. Stir to combine, bring to a boil, then reduce heat and simmer uncovered for 15 minutes.

Step 4: Remove the bay leaf and carefully blend sauce to the desired consistency.

Step 5: Taste and adjust seasoning if needed. 

Step 6: Serve sauce over whole wheat pasta and garnish with fresh basil.
