Description

These Applesauce pancakes are a delicious and healthy breakfast option made with rolled oats, unsweetened applesauce, and almond milk, making them a perfect start to your day!


Ingredients

1 3/4 cup Rolled oats

1 cup Unsweetened applesauce

2 Eggs

1/3 cup Unsweetened almond milk

1 tsp. Vanilla extract

1 tbsp. Maple syrup

1 1/2 tsp. Baking powder

1 tsp. Ground cinnamon

1 Pinch of salt

1 tsp. Olive oil


Instructions

Step 1: Add the oats, applesauce, eggs, almond milk, vanilla extract, maple syrup, baking powder, cinnamon, and salt to a blender. Blend until smooth and creamy. (If mixture becomes too thick during cooking, add more almond milk as needed)

Step 2: Heat a nonstick skillet or griddle over medium heat and lightly coat with olive oil.

Step 3: Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minuets until bubbles form and the edges look set. Flip and cook for an additional 1-2 minuets until golden brown.

Step 4: Repeat until the batter is gone. This recipe should make about 8 pancakes.

Step 5: serve warm with your favorite toppings, such as more maple syrup, fresh fruit, or a sprinkle of cinnamon.
