Delicious golden-brown carrot and corn fritters paired with a refreshing mint yogurt dip.
Ingredients
5 medium carrots, peeled & grated
1 clove garlic, minced
1 red onion, sliced into half-moons
5.6 oz. canned sweetcorn, drained
2 tsp. paprika
1 tsp. ground cumin
1 cup chickpea flour
1 tbsp. fresh mint, chopped
juice of ½ lime
1 tbsp. olive oil
3/4 cup Greek yogurt
Instructions
Step 1: In a large bowl, mix together the carrots, garlic, onion, sweetcorn, paprika, cumin, and chickpea flour. Season with salt and pepper.
Step 2: Heat 1 tbsp. olive oil in a skillet over medium heat. Shape the mixture into small patties and sauté for 3-4 minutes on each side until golden.
Step 3: Place the mint, yogurt, and lime juice into a small bowl and stir to combine. Serve the dip alongside the fritters.
