Thanksgiving Leftover Sandwiches (4 Sandwiches)

Description
A delicious way to use up Thanksgiving leftovers by making sandwiches with turkey, stuffing patties, green beans, mashed potatoes, cranberry sauce, and soft rolls!
Ingredients
2 cups leftover stuffing
2 cups cooked turkey breast, sliced or shredded
1 cup leftover green beans, trimmed
1 cup mashed potatoes
1/2 cup cranberry sauce
4 sandwich rolls or slices of bread
1 large egg, lightly beaten
1/2 cup grated cheese, (optional)
2 1/2 tbsp. olive oil
salt and pepper, to tase
Instructions
Step 1: Put the stuffing in a bowl and break it up with your hands. Add the beaten egg and grated cheese (if using), mixing it well with the stuffing.
Step 2: Form the stuffing mixture into 4 equal patties, each about 3 inches wide and 1/2 thick. Put 2 tbsp. olive oil into a skillet and heat on medium. Fry the patties 2-3 minuets per side until golden brown and crispy. Set aside on a paper towel-lined plate until you are ready to assemble the sandwiches.
*While the stuffing patties are cooking you can gently reheat the mashed potatoes and turkey in the microwave.
Step 3: Heat remaining olive oil in the pan. Add the leftover green beans and saute over medium heat for 3-5 minuets. Add salt and pepper as needed.
Step 4: Slice the sandwich rolls in half. Spread a layer of cranberry sauce on the bottom of each roll. Top with 1/4 cup mashed potatoes, 1/2 cup turkey, 1/2 cup green beans, and a crispy stuffing patty.
Step 5: Place the top half of the roll onto each sandwich. Serve warm and enjoy!
