A tasty Mediterranean-style pizza topped with spinach, roasted peppers, and creamy feta—easy to make and perfect for a light, flavorful meal.
Ingredients
1/2 cup feta cheese
2 cloves garlic
1/2 cup orange pepper, sliced
1/4 cup red onion, sliced
1/2 cup red pepper, sliced
1 cup spinach leaves, raw, torn
1/2 tomato, sliced
1 whole wheat pita
4–6 Kalamata olives, sliced
1 1/2 tbsp. olive oil
Instructions
Step 1: Toss peppers, tomatoes, onions and garlic with olive oil and spread on a baking sheet. Roast at 400 degrees for 20 minutes. Add pita on a baking sheet to the oven for the last 7-10 minutes to toast it before putting on toppings.
Step 2: Layer peppers, tomatoes, onions, olives, and spinach on toasted pita. Sprinkle with feta. Drizzle an additional 1/2 tsp. olive oil over pizza. Bake for 10 minutes at 400 degrees.
Step 3: Turn oven to broil and cook on low for 2-3 minutes or until flatbread edges begin to brown.
