Description
Flaky salmon and colorful veggies baked en papillote for a light, flavorful Mediterranean meal that’s simple, healthy, and packed with fresh goodness.
Ingredients
2 salmon fillets
2 tbsp extra virgin olive oil
2 tbsp orange juice
1 tbsp lemon juice
10 cherry tomatoes
1 heaping cup snow peas
6 slices lemon
6 slices orange
a pinch of sea salt
black pepper
a few sprig thymes
1 cup cooked bulgur
Instructions
Step 1: Cut parchment paper into square, big enough to be able to accommodate and wrap all the ingredients into a package.
Step 2: Preheat the oven at 350F.
Step 3: Rinse and dry the fish.
Step 4: Rub the salmon with sea salt and black pepper.
Step 5: Drizzle extra virgin olive oil and add the lemon and orange juice.
Step 6: Arrange the vegetables around the fish. Add chopped orange and slices of lemon on top of the salmon.
Step 7: Add a few sprigs of thyme to finish off.
Step 8: Fold the paper in half lengthwise to close and roll the edges together to seal the packets.
Step 9: Place salmon en papillote on the baking tray/dish and cook for about 15 -20 minutes. Serve with cooked bulgur.
